Disappearing Meringues and a Giveaway!

Believe it or not, but those unappetizing flat little discs in the picture were supposed to be chocolate meringues. They certainly didn't go into the oven looking like that. In fact, before dessicating to shrunken circles of nothingness, they looked just perfect. My egg whites had whipped up all nicely and I piped some beautiful, poofy pillows of meringue onto my parchment paper. But about halfway through the baking time, I noticed that they looked considerably smaller. And a little later, they looked smaller still and I started to despair. By the time I took them out of the oven, they were practically gone, although what remains of them looks remarkably like teeny tiny cow patties. Anyone have a miniature model farm in need of some realistic-looking miniature cow patties?

This is my second attempt at low carb meringues and my second failure. I have a few theories about what might have gone wrong this time, but I couldn't muster up the energy to try another batch. All in all, I thought the whole thing quite hilarious. I was only despairing because, after a weekend away from my kitchen, I have no new recipes to share with you. I was ahead there for a bit, with more recipes than I had time to post, but a busy week and a trip up to my sister-in-law's have used up all my reserves. I was so certain this would be a great recipe, I was going to dip the bottoms of the meringues in mint-chocolate ganache. But making meringues without sugar is considerably harder than it looks. I will try again, someday. In the meantime, all is not lost. My baby, the pickiest eater in the world, loves the darn things and is happy to gobble them all up. She is blissfully unaware of any resemblence to cow patties.

We were actually in need of a salt pot, as our kosher salt was just sitting in an open dish by the stove. Now it's in a gorgeous green ceramic pot with an intricate pewter spoon and I somehow feel like a better cook for it!

Hi Carolyn. Sorry the meringues didn't work out. But at least your little one is enjoying them!
I think it would definitely be Kosher Salt since I keep that sitting by my stove as well. It is such a pretty container :)

Oh no, too bad they deflated. It's a tough job, finding healthy ways to re-create all these recipes. I think we all run into recipes we try a few times, and they just don't work. Glad your baby likes them!

What beautiful pots! I'd put kosher salt in mine. It sounds boring, but it's what I reach for most when cooking and baking.

What a wonderful give-away! Of course I would like to store sea salt in this lovely ceramic salt container. But I've also seen a variety of flavored sea salts (at Costco) that I have my eye on. Maybe if I win this ceramic salt container I'll just go get those flavored sea salts. Hope those cookies tasted ok anyway. My crew is usually not too picky about how the food looks (lucky for me!).

Isn't it nice when something that doesn't really turn out ends up being good? We've had a similar issue with those darn tempermental meringues. My last ones were supposed to be pink, just wouldn't cook through and by the time we were done they were hershey kiss shaped cow patties. Not pretty... and not tasty.
Love the little salt pots!! I'd love them! We have some lovely red alea salt from Deb at Kahakai Kitchen that I would keep in one of them.

I'm sorry about the meringue and I understand about having a failure and then not having much to post. But hey, they do look hilarious and life gets in the way sometimes :) I'm sure you will figure out what's wrong with these meringues. I could totally use them for the cows in the farm the kids play with at the school lol!
As per the giveway, Kosher salt...for sure. I would keep that in those wonderful ceramic pots :)

Carolyn-Funny thing about meringues, if you don't use sugar, which really balances the egg white, they will most certainly flatten each and every time...and the mixing of it is crucial, and when to add the sugar to the egg white, which is slowly at the end. Any dessert of mine that flops, the little ones still eat it, because it still tastes yummy...I'm sure yours did too!

Love you little pewter set giveaway, I would use one for homemade jam to serve when I make large jars of the jam, and the other one for course sea salt, which I like to keep on hand.

I'd keep my diamond kosher salt in it.

Speaking of meringues, I was researching them yesterday and saw someone claimed much success using oligofrutose. (they had gone through all of the regular low carb sweeteners without success...xylitol, erithritol, splenda..) Carb free, and seems to have no health problems. It's a natural product, not a chemical one. I'm now on a quest to find that stuff.
